Pre-Scraping Without Slowing the Dish Station

Organise pre-scraping as a clear step in the dish station. Define responsibility, tools and feedback before changing equipment or chemical settings.

Pre-scraping is easy to overlook when staff focus on how quickly racks enter the dishwasher. A workable routine accounts for the time before loading as well as the number of cycles completed. Start by observing where dirty ware arrives and how food debris is handled.

Give the step a place

Identify a designated preparation point before the loading area. Keep waste handling and tools organised around the site’s sanitation procedures. Staff should not have to carry a partly prepared stack across the clean side to find a tool or bin.

List the common items that require attention: plates with remaining food, utensils with trapped debris and cookware that needs a separate preparation process. Use the relevant equipment instructions to determine the permitted method for each item.

Separate ordinary work from exceptions

A normal plate and heavily baked-on cookware need different decisions. Create an exception route for items that cannot proceed through the normal sequence. The route should identify where the item goes and who decides the next step, rather than encouraging staff to send it through repeated cycles indefinitely.

Do not turn the exception area into an unidentified chemical-soaking station. Any product used there needs a defined purpose, compatible container and written instructions from the current product and equipment information.

Make a short observation record

  • Note the busiest arrival time for dirty ware.
  • Count how often staff leave the preparation point for missing tools.
  • Record which items repeatedly return for rework.
  • Ask the unloading employee which residue patterns recur.

Observe a representative period before making changes. If one employee handles a different mix of ware, comparing raw rack counts alone can be misleading.

Improve the handoff

Agree a simple signal for an item that needs additional preparation. Keep the signal consistent across shifts, and review recurring exceptions with the kitchen supervisor. The process should help staff make a reliable decision while service continues.
