Planning Dishwashing for a Busy Service Window

Map the busiest dishwashing window using actual rack demand, handling time and clean-storage needs. Find workflow bottlenecks before assuming a new machine is required.

A kitchen’s busiest dishwashing period may occur after the busiest customer period. Returned plates, cookware and glassware arrive in waves, and the work around the machine can constrain the station as much as the wash cycle itself.

Observe the whole sequence

Map receiving, sorting, preparation, rack loading, machine operation, unloading and clean storage. Note who performs each step and where work accumulates. A simple sketch of the station often makes repeated crossing or unnecessary carrying visible.

Record rack types as well as totals. A rush dominated by cups is different from a banquet return containing large platters. Keep a separate note for items that cannot follow the normal rack arrangement.

Measure a representative window

Choose a normal busy service period and note how many racks reach each stage at regular intervals. The goal is not to pressure individuals; it is to understand whether the process has enough space, tools and staffing for the workload.

Include these observations:

  • Where dirty ware waits longest.
  • Whether staff wait for racks, clean landing space or the machine.
  • How often completed items are handled again unnecessarily.
  • Whether rewash contributes to the queue.
  • Which interruptions occur at the same point in service.

Test a small operational change

For example, if clean storage repeatedly fills, moving a trained employee’s collection task may relieve the queue more effectively than accelerating loading. Document the change and compare another similar service window.

Do not exceed equipment limits or bypass the approved wash process to improve a count. Capacity planning has to work within the machine’s operating requirements and the site’s handling procedures.

Prepare a useful equipment discussion

If a constraint remains, bring the observations to a service or equipment consultation. Include the present make and model, available space, rack mix and peak demand. This is more useful than asking for a machine sized only by the number of seats.
