Separate Food-Contact and General Surface Tasks

Keep food-contact tasks distinct from general cleaning. Identify the required process and approved products instead of assuming that a clean-looking surface is ready for food.

A general cleaning task and a food-contact sanitation task are not interchangeable. The Canadian Food Inspection Agency describes cleaning as removing dirt or debris and sanitizing as a separate reduction of microorganisms, normally following cleaning. Build your site’s procedure around the actual application.

Identify the surface’s role

Mark which surfaces contact food and how they are used. Include movable equipment and accessories rather than considering only fixed counters. A tray or utensil can move between areas while retaining its food-contact role.

Keep this inventory connected to the operation’s food-safety procedures. Staff should not decide a surface’s required process merely from the room it is in or how clean it appears.

Choose products for the specified purpose

Check that the product’s current instructions permit the intended task. Do not infer sanitizing or disinfecting efficacy from a general cleaner description. Multi-SF is presented here for routine cleaning; any separate sanitizing requirement needs a product and procedure appropriate to that purpose.

Where more than one stage is required, identify the order, product and instruction reference for each stage. Do not collapse the process into a single box labelled “spray and wipe.”

Make the task card complete

Use these fields:

  • Surface or equipment and its food-contact role.
  • Preparation required before the task.
  • Approved cleaning procedure and product.
  • Any required subsequent sanitizing procedure.
  • Product-specific removal or rinsing requirements.
  • Verification and release responsibility.

Use the actual product and equipment instructions for technical conditions. This guide does not supply a universal concentration, contact time or compliance standard for every operation.

Keep questions visible

If the intended use, document or product identity is unclear, record the gap and ask the responsible supplier or food-safety lead. An incomplete instruction should not become an informal staff custom.
